Fig Salad with Crispy Chanterelles

Ingredients
  • 1 cup crisped chanterelles
  • sliced figs
  • 1 large green apple diced
  • gorgonzola cheese
  • 5 oz arugula
  • for the dressing:
  • 2 / 3 cup olive or other oil
  • 1 / 3 cup of red wine vinegar
  • 1 tsp fresh rosemary chopped fine
  • 1-1½ tsp crushed peppercorns
Instructions
  1. to crisp the chanterelles: place the mushrooms in a medium saute pan and dry cook them over medium-high heat for five minutes or less. here you want to make sure that they are retaining no moisture. add a ½ tbl of butter and cook until crisped.
  2. assemble salad with ingredients
  3. mix all dressing ingredients and whisk vigorously to combine
