I’ve found the secret to happy mornings. It starts with knowing that you can beat the clock and still indulge in a healthy and delicious choice. And once you can manage this you’re seemingly beaming the rest of the day.
A summer secret? Fruit compote.
As pregnant as the trees are with thick and juicy bearings, there is quite a masterful and simple way of preserving their sweet bounty. A quick simmer in sweet honey (or agave) yields a syrup that is difficult to keep from adorning, well, anything. This is where I gleefully summon breakfast.
For this particular recipe I use plums (but the possibilities are endless). My recommended application occurs at the bottom of greek yogurt and granola, only to be lovingly stirred into a treasured abyss.
Simple matters of the heart.
A healthy breakfast option is yours in mere minutes. The compote will keep in the refrigerator the remainder of the week (if you can keep it around that long).

- 2 large plums pitted and chopped
- ¼ cup of honey
- ¼ cup of apple juice
- 1½ tsp minced fresh basil
- Bring plum, honey, and apple juice to a boil in a medium sauce pan over medium-high heat (just enough to dissolve the honey).
- Reduce heat and simmer until fruit has softened (you can help the process by gently mashing with a spoon) and liquid has thickened - about ten, or up to twelve minutes.
- Once thickened stir in fresh basil.
- Enjoy with ½ cup of greek yogurt and a ¼ cup of granola.
