Rosemary Pomegranate Popsicles

Strange desires seemingly unearth themselves within me given this time of year. We are securely surrounded by the cold (our forecast predicted ‘freezing’ as the high temperature), there is a frequent need to add additional clothing, and abundant is the great white precipitation we affectionately call snow. I question myself, although briefly, of the temptations that I contain. And be it that these temptations appear in the form of popsicle and ice treats, always in the cold.

I am ever grateful of the upcoming holiday – no matter the celebration there is a constant warmth that surrounds the seasonality. I revel in the gathering, festivities, lavishness, and simplicity. The quiet, candle-lit night inside is just as paramount as the rambunctious night spent dancing and swinging. We grace one another’s souls, we appreciate the feast, we accept the year, and we cradle the next.

Rosemary Pomegranate Popsicles

Ingredients
  • 4 cups pomegranate juice
  • 1 tbl finely chopped rosemary
  • arils from 1 pomegranate
Instructions
  1. bring pomegranate juice and rosemary to a boil in a pot over medium heat. simmer mixture 5-10 minutes on low, until slightly reduced. strain rosemary from pomegranate juice and allow to cool.
  2. fill popsicle molds 1 / 2 to 3 / 4 of the way with juice, and add arils to each pop. add the rest of the juice. freeze popsicles half-way, insert sticks, and continue to freeze until completely hardened.
Notes
measurements may vary according to what popsicle molds are on hand - downsize or upsize ratio as needed.

    They might not be a “traditional” holiday treat, but I bet popsicles would be fantastic while curled up next to a fire! Love the idea of rosemary + pomegranate together!
